This passed weekend was Thanksgiving in Canada which meant Turkey dinner with all the fixing's. I love a good Turkey dinner but am not a fan of the traditional leftover turkey sandwiches and soup. I Remember, several years ago now, going to a Celebrating Christmas with an ex and his family and they turned the leftovers into a wonderful dish that I have played around with over the years with several variations. I have used turkey and roast chicken, Sometimes I through in some leftover stuffing and other times I don't. It's always topped with cheese and tastes absolutely wonderful. My kid does not like turkey or cranberry sauce, but she would clear out an entire pan of Turkey Dinner Shepard's Pie if given the chance,

Ingredients

  • Left over Turkey (or roast chicken)

  • 2 Cups Gravy

  • 1-2 Cups Whole Berry Cranberry Sauce

  • 4-5 Cups Mashed Potatoes or Combination of Mashed potatoes and Stuffing

  • Cheese (I use a pre-grated 3 cheese blend)

To Prepare the Sheppard's Pie

  1. Spread out a layer of Turkey in the bottom of a 9"x13" Baking Dish

  2. Pour Gravy over Turkey

  3. Add a layer of Cranberry sauce

  4. Add a layer of potatoes making sure its evenly spread out.

  5. Add a layer of as much cheese as you would like

  6. Bake at 350 until heated through and cheese is melted (about 45-60mins)
