Cheese Fries With Emerald Isle Sauce

Covid has my family looking for new ways to enjoy our favourite restaurant foods without breaking the bank using food delivery services or risking my immune compromised teen’s health by taking them in to the places we really do love and still try to support!

Kelly O’Brian‘s makes the most delicious cheese fries, known as Pacho’s, and serves them up with an amazing sauce known as Emerald Isle sauce.

Ingredients:

  • 1 package curly or waffle fries

  • 1/2 cup cheddar cheese, grated

  • 3 green onions, sliced into rounds

  • 1 1/2 cups Miracle Whip (DO NOT use Hellman's. It just won't taste the same)

  • 1 1/2 tablespoons prepared yellow mustard

  • 1/4 cup white vinegar

  • 1/2 cup granulated sugar

  • 1/2 teaspoon ground basil

  • 1/2 teaspoon ground tarragon

  • 1/8 teaspoon ground pepper

  • 1/8 teaspoon salt

  • 1/8 teaspoon garlic powder Or fresh pressed garlic.


How to Prepare:

  1. Cook the package of fries according to package directions. When the fries are finished cooking remove them from the oven and sprinkle them with cheddar cheese. Return them to the oven for about 2 minutes, or until the cheese has melted.

  2. While the fries are cooking, prepare the sauce. Combine all of the ingredients in a medium-sized bowl. Mix until well combined. Store in a covered jar in the fridge until ready to use.

  3. Top with green onion and serve with sauce on the side for dipping.
