Chocolate Haystacks

My roommate asked me for haystacks and of course I had to add them to the cookie list this year!

Haystacks are a super simple no bake cookie which makes them great when you want a treat but really don’t want to turn on the oven!




Ingredients

  • 3 cups oats (I use a wonderful Gluten Free rolled oat)

  • 1 cup shredded coconut

  • 1/2 cup unsalted butter

  • 1/2 cup milk

  • 1/2 cup cocoa powder

  • 2 cups sugar

How to Prepare

  1. In a medium bowl stir together the oats and coconut.

  2. Add the butter, milk, cocoa and sugar to a medium saucepan over medium heat

  3. Whisk gently  as everything melts together, then bring the mixture to a boil for 5 minutes while gently whisking. 

  4. Pour the chocolate mixture into the bowl with the oats and coconut and stir together.

  5. Drop tablespoon sized spoonfuls onto a baking sheet lined with wax paper and place in the fridge for 30 minutes to harden.
