Chicken Parmesan

I love a good Chicken Parmesan made with fresh ingredients. It's fairly simple to make and is always a hit in my house.

Ingredients:

  • 4 Chicken Breast halves

  • Salt and Pepper to taste

  • 2 Large Eggs

  • 1 Cup Bread Crumbs or more if needed (I use crushed Italian Croutons but Panko works really well)

  • 1/2 Cup Grated Parmesan

  • 2 Tbls All-Purpose Flour

  • 1 Cup Olive Oil for Frying

  • 1/2 Cup Prepared Tomato Sauce

  • 1/4 Cup Fresh Mozzarella cut into bite size cubes

  • 1/4 Cup Grated Provolone

  • 1/4 Cup Grated Parmesan

  • 1 Tbsp Olive Oil

How To Prepare:

  1. Preheat the Oven to 450 degrees

  2. Place Chicken between two sheets of plastic wrap or wax paper and firmly pound with the smooth side of a meat mallet to a thickness of 1/2 inch. If you don't have a meat mallet and rolling pin works really well.

  3. Season Chicken with salt and pepper

  4. Beat eggs in a shallow dish and set aside

  5. Mix bread crumbs with 1/2 cup of Parmesan cheese in a separate dish and set aside.

  6. Place flour in a sifter and sprinkle over chicken breast making sure to evenly coat both sides.

  7. Dip flour coated chicken in beaten eggs then transfer chicken to breadcrumb mixture making sure to press crumbs into both sides. Repeat for each Chicken breast and set breaded chicken aside for about 15 minutes

  8. Heat 1 Cup of Olive oil in a large skillet on medium-high heat until it begin to shimmer.

  9. Cook Chicken until Golden in colour, about 15 minutes on each side, The chicken will finish cooking in the oven

  10. Place chicken in a baking dish and top each breast with 1/3 cup of sauce.

  11. Layer each breast with with equal amounts of mozzarella, fresh basil, and provolone.

  12. Sprinkle 1-2 Tb;sp of Parmesan on the top and drizzle with 1 Tbsp of olive oil.

  13. Bake in preheated oven until cheese is browned and bubbly, and chicken is no longer pink in the center, 15-20 minutes.

  14. Serve on a bed of cooked Fettuccini and a side of Caesar Salad.
